A Mint Chimichurri to Remember
Chef Lynn recommends adding mint to the chimichurri to brighten the dish. Simply spoon over lamb roast or rack of lamb for a perfect pairing.
Yield: 2 cups
INGREDIENTS:
• 1 shallot, finely minced
• 4 garlic gloves, finely minced
• 1 pinch, red pepper flakes
• ¼ cup red wine vinegar
• 1 Meyer lemon, juiced
• ½ cup mint leaves, finely chopped
• ½ cup parsley, finely chopped
• ¼ cup cilantro, finely chopped
• ¼ cup chives, finely chopped
• ¾-1 cup high quality olive oil
• salt & pepper to taste
DIRECTIONS:
1. Combine shallot, garlic, chili flakes & vinegar in a bowl. Let sit 5-10 minutes.
2. Stir in the remining ingredients then season with salt & pepper to taste.
